Granola salad with baked pears and Appenzeller® Gold Label

Pears:

  • 2 pears (Doyenne du Comice)
  • 1 knob of butter
  • 1 tablespoon dark soy sauce

Salad:

  • 100 g mixed salad leaves
  • 100 g lamb’s lettuce
  • 40 g walnut granola
  • Cubes of Appenzeller® Gold Label as desired

Dressing:

  • 1/2 tablespoon honey
  • 1 tablespoon vinegar
  • 1 tablespoon mirin
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sesame oil

Preparation:

  1. Take a pan and put it on medium heat with a knob of butter.
  2. Cut the pears into four and place them in the hot pan.
  3. Add a tablespoon of dark soya sauce while they are frying.
  4. The pears are ready when they are golden brown on each side.
  5. Take a small mixing bowl and add the dressing ingredients.
  6. Mix with a small whisk until you obtain your creamy dressing.
  7. Put the mixed salad leaves, lamb’s lettuce, granola and Appenzeller® Gold Label cubes into a salad bowl.
  8. Mix everything together
  9. Arrange the pears on the salad and drizzle with the dressing.

The perfect brunch salad. An ideal dish when you don’t know whether you feel like something savoury or sweet – your last dance before lunch.
