French Toast with Creamy Le Gruyère AOP, Lemon Curd and Poppy Seeds

Serves 4
Time: approx. 20 minutes

French Toast:

  • 4 slices white bread (preferably day-old)
  • 3 eggs
  • 2 dl milk (3%)
  • ¼ tsk salt
  • butter for cooking

Creamy Gruyère:

  • 50 g Le Gruyère AOP Mild
  • 100 g cream cheese
  • 1 dl heavy cream
  • 1 tsp apple cider vinegar
  • a pinch of sea salt

For serving:

  • 4 – 6 tbsp lemon curd
  • 1 tbsp poppy seeds
  • lemon zest

Preparation:

  1. Prepare the creamy Gruyère mixture by finely grating the cheese.
  2. Combine the cheese with the remaining ingredients until creamy.
  3. Whisk eggs, milk and salt in a medium bowl for the French toast.
  4. Dip a slice of bread in the egg-milk mixture and flip to coat both sides. Heat butter in a skillet. Place bread in the skillet and cook over medium heat for about 2 minutes on both sides until golden brown.
  5. Serve with a dollop of creamy Gruyère and lemon curd. Garnish with poppy seeds and lemon zest.

An easy to make and delicious brunch dish served with a lovely creamy Gruyére topping – crispy, salty and sweet with a lemony freshness.
