I may well have started my career in the hospitality sector when I was a teenager at McDonalds, but after that I cooked most of the way up my culinary career in two-star restaurants such as Ciel Bleu**, Brouwerskolkje** and &Samhoud**. It was in these establishments that I developed my characteristic style drawing inspiration from international street food to which I apply classic techniques. Driven on by an urge to be the best, I constantly push out my own boundaries. As a chef and as an entrepreneur.
I feel the need to do and to be better every day. For the people around me, for myself, and for the city. Creating beautiful dishes and putting Amsterdam on the culinary map – that’s what I want. Amsterdam should be the culinary hotspot of the world. If we can be part of that with Daalder, I would love that.
